I have a very yummy cajun recipe for you today! I cooked this the other day and we are still eating on it now. I got the recipe from a friend of the families and it is super super easy to make. I am not a huge fan of crawfish so I put shrimp in it, but you can use either one.
Here is the recipe. I will post pictures of it after the recipe.
2 lb. Shrimp or less
2 C. chopped onions
1 C. bell pepper, chopped
1 C. chopped Celery
1 stick of Parkay or butter of your choice
1 Can Cream of Mushroom Soup
1 Can tomato soup
1 Can Rotel tomatoes
1 Can Water
1 Clove Garlic
1. Chop all the vegetables up. I used a Vidalia Chop Wizard. It is so easy to use and does not take very long.

Cut the middle out of the bell pepper and the seeds. |
Cut the ends of the celery and make sure you wash everything. |

2. Saute the onions, garlic and bell pepper in stick of butter for 30 minutes. (until the onions are soft).
3. Add the shrimp/crawfish and simmer for 20 minutes (until shrimp/crawfish is hard).

After sauteing the shrimp with the vegetables. |
4. Add the soups and water and cook for 30 minutes on low heat.
After adding the soups, cook on low heat. |
5. Serve over rice. (We use brown rice so it is a little healthier).
And the finished product! So very yummy! I could still smell it in my house the next day!

The other day I talked about how I was trying to stay under 2,000 calories. Well I have changed that just a little bit and I am going to try and stay under 1,500. After realizing how much food I could eat with 2,000 and my body size I realized I needed to eat way less than that. I started using a website called My Fitness Pal to help me count these calories. It is a great website. Thank you Karen for telling me about it.
Here is what I ate yesterday....
*A cup of Trop 50 Orange Juice
*1/4 cup egg whites
*2 turkey sausage patties
*1 whole wheat English Muffin with Almond Butter
Mid morning Snack:
*1 bottle of water
*1 Del Monte Bananna
Lunch:
*1 Bottle of water
*Shrimp Etouffee- Mentioned Above
Mid Evening Snack:
*1 bottle of water
*1 small peach
Dinner:
*Shrimp Etouffee- We have been eating on that for a couple of days now.
Snack before Bed:
*Bryers Fat Free Ice Cream
* 1 tbs. Smuckers Magic Shell Chocolate
Breakfast today: Saturday, 7/2/11
*1 Peppridge Farm Cinnamon Raisin Swirl Bread
*1/4 cup egg whites
*3 pieces of Butterball Turkey Bacon
*1 glass Trop 50 Orange Juice
Mid Morning Snack:
*1/2 cup sliced Strawberries
Lunch:
*Can you guess what it will be........
Shrimp Etouffee again!!!! haha
Brian and I ran on Thursday and when we finished, this is what I felt like....
I was so tired I could barley make it up the stairs to our apartment. I ran 2 miles and he did 3. It was so stinking hot out though. We went and swam laps for 30 minutes yesterday. That felt so great to be in the water!
We are spending time with family this weekend for July 4th and I am running a race on Monday morning!!! It should be a hot one!!!

I am from South Louisiana, and I have never even tried etouffee! Thanks for sharing the recipe! I see you did use the "Cajun holy trinity" (onion, bell pepper and celery)! Great job holding yourself accountable with eating!
Thanks Megan!! I can not believe you haven't tried it! It is so beyond yummy and very easy to make. I have never heard of the Cajun holy trinity! That is a neat name for it!
Wow that looks fantastic! I've never had anything like that and I've also never had crawfish. You can bet your butt I'm going to try this! Is this a southern dish?

Insanity is awesome because of its convenience to be able to do it anywhere you want, and the unique workouts. I feel so much stronger from doing it but it takes a lot out of you so running is the last thing you're thinking of attempting that same day. Definitely recommend adding it along side running here and there.
I have never liked etouffee...just sayin. lol
I had a Vidalia Chop Wizard and it just broke recently. I didn't realize just how much time it saved me until I was mincing everything with a knife again, haha! This looks delish, by the way!
